BRAND NEW RACHEL’S RECIPE!!: Ranch Roasted Potatoes

Yes, that title is in ALL CAPS for a reason. Why you ask? Because I have been slacking and I finally found a NEW recipe that tastes amazing! I actually made these for our Labor Day get together at my mom’s house and everyone was asking how I made them! I felt kind of guilty when I told them I only used FIVE ingredients…..

Ranch Roasted Potatoes
Makes 4 servings
Ingredients:
  • 2 lbs red potatoes, washed and quartered
  • 1 (.4 ounce) packet Ranch salad dressing and dry seasoning mix
  • Olive oil cooking spray or olive oil
  • 1 teaspoon salt
  • Shredded Cheese

Instructions:
Preheat oven to 425 degrees. Quarter the potatoes and throw in a bowl. Either spray with oil cooking spray or splash them with olive oil. Dump the Ranch seasoning in bowl and salt on the potatoes and stir together. You want to make sure the potatoes are all covered evenly.

Line a baking sheet with foil or spray it with non-stick cooking spray. Pour potatoes onto the baking sheet and spread out potatoes evenly.

Bake in oven until potatoes are cooked through, and edges start to turn very dark brown, approximately 20-25 minutes. To check to see if they are done, pierce one of the larger pieces of potato with a fork to see if it is soft.

Add the cheese on top when they come out of the oven if you wish. Can you say yummy?! And it makes a GREAT side dish.
